Tasting Notes:
This wine was produced from the 70 year old vines grown on the deep red volcanic soils from the hillside on Wynwood Estate. Warm and dry spring conditions and a summer of above average rainfall provided ideal growing conditions. This wine is produced using some of the best parcels of fruit from the vineyard.

The fruit was handpicked on the 12th February 2013 and crushed into stainless steel open red fermenters. The ‘must’ is allowed to ‘cold soak’ for 24 hours prior to yeast inoculation. During the course of the 9 day fermentation the ferment was routinely ‘pumped over’ and ‘racked and splashed’ to promote healthy yeast activity and enhance colour and avour extraction from the Shiraz skins. After ferment completion the wine was ‘taken off’ and pressed in a basket press. These traditional presses, while a little more time consuming and labour intensive, provide a very controlled and gentle press action that suits the production of the Reserve Wines.

After four days the wine was racked off ‘gross lees’ to French oak hogsheads, 30% of which were new. During the course of 15 month maturation period the wine was routinely racked, a technique used to continually improve the wine’s clarity and reduce the risk of microbial activity. This has resulted in a wine of depth and intensity both on the nose and palate. With suitable cellaring it is expected that continue to develop and drink well for the next decade.
